Camel Rogan Josh

Rogan Josh is a delicious lamb preparation from Persian and Kashmiri cuisine. Usually mutton are used for its preparation, here i gave a little variation , i used camel meat instead of that. Like mutton, camel meat ( one of the most favorite dish for Arabians) also tastes great, Camel Rogan Josh is also a wonderful recipe. Give a try on it.




INGREDIENTS FOR PREPARATION

  1. Camel meat: 1/2 kg
  2. Ghee: 150 g
  3. Curd: 150 ml
  4. Cloves: 4
  5. Cinnamon: 2 inch
  6. Ginger paste: 1 tbs
  7. Kashmiri chilly powder: 2 tsp
  8. Cumin powder: 1 tsp
  9. Garam masala powder: 1 tsp
  10. Sugar: 1 tsp
  11. Asafoetida: a pinch
  12. Rose water: 1 tsp
  13. Almond: 20 g
  14. Khoya: 50 g
  15. Saffron: a pinch(optional)
  16. Water: 1/2 cup
  17. Salt: a pinch
METHOD OF PREPARATION

  • Heat a pressure cooker, add ghee in it.
  • Saute cloves, cinnamon and a pinch of asafoetida in it.
  • When it brings out a pleasant odor, add meat pieces, ginger paste, curd, chilly powder, cumin powder, salt and half cup of water to it, mix well and cook with lid closed( use any other lid, not the lid of pressure cooker as we need to open).
  • When it is about to dries up the water, open the lid and cook by continuous stirring by sprinkling water little by little till masala turns to reddish.
  • Loosen the sticked masala from cooker and combine them with meat gradually.
  • When masala turns reddish and ghee seems clear,add sugar and 1-1&1/2 cup water, stir well and close the lid of cooker.( use cooker lid itself)
  • Cook for half an hour in low flame.
  • When the meat pieces get cooked, add garam masala powder, khoya( mixed in little curd), almond paste(soaked in water for 15 minutes and ground to paste),saffron mixed in rose water, mix them well with the gravy.
  • Cook till the gravy thickens and combines with the meat well, remove from flame.
Delicious Camel Rogan Josh is ready. Serve hot with Paratha or rice.
