Neyyappam is a very simple and popular breakfast or teatime recipe with few ingredients. It is one of the best , healthy and easy recipe for surprise guests or our family members itself.
- White rice: 1 cup
- Jaggery: 3/4 cup( depends on your sweet ness)
- Coconut grated: 1/2 of 1
- Salt : a pinch
- Cardamom: 2
- Oil: for deep frying
METHOD OF PREPARATION
- Soak white rice for 3-4 hours.
- Add soaked rice, grated coconut, grated jaggery, cardamom pods, salt in a wet grinder or mixer grinder. Grind it to smooth thick batter by adding little water.
- Donot make the batter too watery.
- You can add more or less jaggery to your taste.
- Heat oil in a pan and add a small laddle of batter to it.
- Cook it in medium flame .
- When it puffed up, turn to other side and cook to golden color.
- Take out from oil and repeat the step for remaining batter.
Delicious, yummy soft Neyyappam are ready, serve hot with a cup of coffee or tea.
