Poriyunda/Puffed Rice Balls

Poriyunda/ Puffed rice balls or sweet coconut balls are yummy mouth watering snack that are prepared for teatime or special occasions such as Eid and all. It is prepared with coconut and jaggery along with Puffed rice powder, are then dipped in rice batter and are deep fried to golden. Everyone especially kids will love it surely. Give a try on this sweet healthy snack.


INGREDIENTS FOR PREPARATION 

  1. Coconut: 3 large
  2. Jaggery: 1 kg
  3. Puffed rice: 1/4 kg
  4. Marta rice: 1/4 cup
  5. White rice: 2 cup
  6. Egg: 1
  7. Salt: to taste
  8. Oil: for deep frying 
METHOD OF PREPARATION 
  • Soak white rice for 3-4 hours.
  • Grate coconuts .
  • Melt jaggery on a pan.
  • Take a large thick bottomed pan, add grated coconut into it.
  • Pour melted jaggery through a sieve to remove any dust particle in it.
  • Add 1/4 tsp salt also.
  • Mix well and cook in low flame by stirring eventually to avoid sticking and burning at the bottom.
  • Cook till Coconut cooks well and dries up. The more we cook, the more taste will be. Also if we cook coconut- jaggery more, it will increase the shelf life of snack also.
  • We have to cook at least 30-45 minutes in low flame by stirring.
  • Dry roast Puffed rice and powder them.
  • Also roast Matta(brown rice) till all shrinks , cool and powder it.
  • When coconut jaggery mix done well, mix Puffed rice and Matta rice powders. Fold well to get combined.
  • Convert them into small lemon sized balls while it's hot itself. When it is cooled, it will be difficult to make balls.
  • Drain soaked rice and grind it with egg, salt and water to smooth medium thick batter.
  • The batter should be of such thickness that while dipped the balls, it must give a thin layer of batter over the balls.
  • Heat oil in a pan, dip each ball in batter and are fried in hot oil to golden color in medium low flame.
Delicious , yummy Puffed rice balls or poriyunda are ready. When it cools down, store in a airtight container for future use.
