Achappam or kerala Rosette cookies are crispy and healthy snack prepared with a iron mould of any shape mostly of flowers. They are lovely and prepared easily especially during Eid or Christmas. Give a try upon it. You can prepare it without sugar also for diabetic patients.

- White rice : 2 cup
- Egg: 2
- Sugar: 7-8 tbs( add more if you loves )
- Sesame seeds: 2 tbs(optional)
- Salt: 1/4 tsp
- Coconut milk: 2 cup( or use normal water as needed )
- Oil: for deep frying
- Iron mould: 1
METHOD OF PREPARATION
- Soak iron mould in little tamarind water for 15-20 minutes. Wash and drain.
- Soak white rice for 3-4 hours and drain it.
- Grind white rice with egg, sugar, salt by adding coconut milk or simply water to smooth batter. Batter should be of medium thick, not too thick or too thin. You can also use rice powder instead of rice.
- Now mix sesame seeds, if using, to the batter.
- Heat oil in a pan , and dip the iron mould in it.
- Now take it out from oil and dip half of the mould in batter.
- Dip it to oil and shake it in oil till the batter releases to oil.
- Repeat the step for remaining batter.
- Don't overcrowd it in oil.
- Fry them in low flame till all sides get golden color by turning to both sides.
Delicious, crispy and lovely Achappam or Kerala Rosette Cookies are ready. Cool and store in airtight container for future use.
