Chicken Laksa

Chicken Laksa is a delicious dish with a nice combination of vegetables, chicken and noodles in a lovely soup. It is a lovely soup recipe also considered as a light dinner recipe. It is really fantastic recipe , let give a try upon it.



INGREDIENTS FOR PREPARATION
  1. Chicken(boneless): 1/2 kg
  2. Boiled noodles:1 cup
  3. Cucumber(small): 1
  4. Garlic: 4
  5. Ginger: 1 inch
  6. Lemon grass: 2 stalk
  7. Shallots: 4
  8. Red chillies(fresh):2
  9. Snow peas: 100 g
  10. Chicken masala powder: 1 tsp
  11. Pepper powder: 3/4 tsp
  12. Lemon juice: 1 tbs
  13. Chicken stock: 3 cups
  14. Coconut milk(thick): 1/2 cup
  15. Spring onion: 3
  16. Coriander leaves: little
  17. Mint leaves: little
  18. Big lemon: 1
  19. Sesame or olive oil: 3 tbs
  20. Salt: to taste
METHOD OF PREPARATION

    • Grind shallots, ginger, garlic and lemon grass into fine paste.
    • Boil noodles , drain and keep aside.
    • Cut red chillies into halves and remove its seed.
    • Cut chicken into strips and marinate it with little salt.
    • Heat 2 tbs of oil in a pan, and fry chicken strips in high heat till they turns golden.
    • Remove from oil and drain it.
    • To the same pan, add remaining oil and saute above ground paste for 2-3 minutes.
    • Now add chicken stock, red chilly pieces, snow peas, chicken masala, pepper powder and salt.
    • Allow it to boil.
    • Now add thick coconut milk and lemon juice, stir well and again allow it to boil for sometime.
    • Cut the cucumber into slices. Chop spring onion, coriander and mint leaves.
    • Arrange noodles in serving bowls,arrange fried chicken, cucumber slices, chopped coriander, mint leaves and spring onion above it.
    • Pour prepared soup over it and garnish with lemon wedges.
    Delicious Chicken Laksa is ready , serve hot.
