- Chicken(cooked and cut into small piece without bones: 3/4 cup
- Chicken stock: 4 cup
- Carrot(grated): 1/2 cup
- Capsicum: 50-60 g
- Spring onion: 2 tbs
- Chilly oil: 1-2 tsp
- Soy sauce: 1 tsp
- Vinegar: 2 tsp
- Cornflour: 4 tsp
- Pepper powder: as required
- Sal tr: to taste
- Cook carrot, capsicum in chicken stock for 5 minutes.
- Add chicken pieces, soy sauce and salt to it, mix well and boil.
- Mix cornflour in little water and pour onto above mixture.
- Add chilly oil, vinegar and pepper powder, cook till it thickens. Add pepper powder to your spiciness.
- When it reaches required thickness, add chopped spring onion and remove from flame.
For the preparation of chicken stock
- Boil 200 g of chicken bones in water for 5 minutes and threw the water.
- Again cook these bones with 10 cups of water, 1 chopped carrot, 2-3 celery stalk chopped,2-3 parsley stalks, 6 cloves, 7 peppercorns, 1 bay leaf,
- When it start boiling, turn the flame to low and cook for atleast 1 hour.
- Discard any waste comes to the surface and add little water instead.
- Turn off the flame after 1 hour, allow it to cool.
- Filter the stock and use.
- You can refrigerate it for further use in a closed container.
- Nowadays we use chicken mince for many dish preparation, at that time we can use the bones for stock preparation and can store it for future use.
