Shahi Murgh Kofta Pulao

INGREDIENTS FOR PREPARATION

  1. Biriyani rice: 1&1/2 cup
  2. Chicken mince: 200 g
  3. Onion: 2(medium)
  4. Ginger paste: 1 tsp
  5. Tomato puree: 2 tbs
  6. Red chilly powder: 1 tsp
  7. Cardamom: 3
  8. Cloves: 5
  9. Bay leaf: 1
  10. Cinnamon: 1 inch
  11. Ghee: 4 tbs
  12. Salt: to taste
  13. Coriander leaves: 1 tbs
METHOD OF PREPARATION
  • Wash and soak rice for 1 hour. After that drain and keep aside.
  • Mix chicken mince, 1/2 tsp ginger paste , 1 tbs coriander leaves chopped and salt all together in a bowl.
  • Wet your hands and make small kofta balls of it.
  • Refrigerate for 1 hour.
  • Take a thick bottomed pan, Heat ghee in it. You can also use oil instead or a mixture of both.
  • Add cinnamon, cardamom, cloves, bay leaf chopped onion and ginger paste to hot ghee and saute for 2-3 minutes in high flame.
  • Now add drained rice and saute for 1-2 minutes in high flame.
  • Add 2 &1/2 cup of hot water, tomato puree, red chilly powder and salt to rice and cook for 2 minutes again in high flame.
  • Now add koftas and cover the pan.
  • Cook in low flame till whole water dries up and rice is about to cook.
  • Give a stir and again cook for 2 minutes with closed lid.
  • Remove from flame, and keep aside unopened for 5-10 minutes.
  • After 5-10 minutes, open the lid and mix well.
Delicious Shahi Murgh / Chicken Kofta Pulao is ready. Serve hot.
