Vegetable pulav is a quick and easy rice recipe with mixed vegetables. They are healthy recipe with mild spice combination. No other curry or gravy is required for this, If you are lazy to cook, try this lovely recipe.
- Basmathi rice: 1 cup
- Mixed vegetable chopped: 1 cup( of your choice, eg: carrot, greenpeas)
- Onion: 2
- Green chilly: 2
- Ginger-garlic paste: 1 tbs
- Cardamom:1
- Cinnamon: 1 inch
- Cloves: 2
- Bay leaves: 1
- Star anise: 1
- Ghee: 1 tbs
- Mint leaves chopped: 1/4 cup
- Coriander leaves chopped: 1/4 cup
- Salt: to taste
- Soak green peas for 3-4 hours , wash and drain.
- Peel off the vegetables and cut into pieces.
- Wash and soak the rice for 15 minutes. Soak in usable water as we used soaked water while cooking.
- Heat ghee in a pressure cooker, and saute whole spices in it.
- Now saute sliced onions in it till they turns translucent.
- Now add ginger garlic paste and slit green chilly and cook till its raw smell goes off.'
- Add chopped vegetables, coriander and mint leaves and cook for 4-5 minutes.
- Now add drained rice and salt and saute for 1-2 minutes.
- Now add 2 cup of water , mix well and close the lid of cooker. Use the soaked rice water also.
- Put the whistle when steam starts escaping through the nozzle.
- Cook till one whistle hears and turn off the flame. Or cook for 10 minutes after placing whistle.
- Open the lid only after all the pressure releases.
- Transfer the rice to a large vessel and mix well using a spoon.
