Ashauk is a delicious Afghan dish . It consist of steamed and stuffed triangle dumblings in yogurt, chana dal and tomato sauce. Here i used leek leaves for stuffing, you can replace it with chicken, meat or any other ingredient of your choice.
INGREDIENTS FOR PREPARATION- All purpose flour: 2 cups
- Cooked chana dal: 1/2 cup
- Leek: 1 bunch
- Yogurt: 1/4 cup
- Tomato sauce: 2-3 tbs
- Water: 3/4 cup
- Olive oil: 2 tbs
- Salt: to taste
- Cook chana dal with little salt.
- Prepare a smooth dough with all purpose flour, salt and water.
- Divide it into small balls and roll it into thin sheets with a rolling pin.
- Cut the white and light green part of leek (discard dark green as it will be too hard) and mix it with oil and salt.
- Now cut the sheets into squares with the help of a knife.
- Take a square sheet, place little leek mix in the middle and seal from both sides to form a triangle shape. Use water or flour paste to seal the edges.
- Repeat the steps for whole dough.
- Keep them in a steamer and steam it for 5-6 minutes.
- Place the ashauk in a serving plate, top it with curd, cooked chana dal and tomato sauce.
