Chicken upperi is a lovely chicken recipe with grated coconut. It is like chamandhi which goes well as a side dish with rice or any dish. It can also be used for stuffing while we preparing snacks. It is delicious with the combination of coconut and spices.
INGREDIENTS FOR PREPARATION
- Chicken: 1/2 kg
- Coconut: 1
- Red chilly: 4
- Pepper powder: 1/2 tsp
- Turmeric powder: a pinch
- Garam masala powder: 1/2 tsp
- Coriander powder: 1/2 tsp
- Fenugreek: 1/2 tsp
- Cumin powder: a pinch
- Ginger chopped: 1 small piece
- Mustard seeds: 1/2 tsp
- curry leaves: 2 string
- Salt: to taste
- Oil: as required
- Cook chicken pieces with turmeric powder and salt.
- After it get cooked, remove its bones and just give a crush on mixer. Don't make it into paste.
- Grate the coconut.
- Roast grated coconut, red chilly, pepper powder altogether a little. No need of roasting it to brownish, just to make little hot.
- Just crush it in mixer jar. Do not grind it more to paste, we need powdered form itself
- Heat oil in a pan, sputter mustard .
- Add coconut mixture along with curry leaves, chopped ginger, garam masala powder, coriander powder, fenugreek and cumin powders to the pan.
- Saute it for 4-5 minutes and add chicken to it.8
- Stir well and cook for another 2-3 minutes in low flame and remove from fire.
