Chicken varutharachathu is a awesome chicken gravy recipe with a traditional flavor.The main flavor providing ingredient is roasted coconut along with shallot and cumin seeds which are then ground into paste.It also has a nice spice combination which brings a special taste and aroma to the gravy. It goes well with any dish.
INGREDIENTS FOR PREPARATION
- Chicken: 1 medium
- Onion: 5
- Green chilly: 10
- Ginger: 2 pieces
- Garlic: 15 cloves
- Tomato: 4
- Potato: 4 small
- Chilly powder: 1&1/2 tbs
- Coriander powder: 5 tbs
- Turmeric powder: 2 tsp
- Cloves: 10
- Cinnamon: 2 pieces
- Cardamom: 5
- Curry leaves: 3 strings
- Oil: 6 tbs
- Grated coconut: 2 cup
- Shallots: 15
- Cumin seeds: 4 tsp
- Salt: to taste
- Heat 1 tbs oil in a pan and roast grated coconut, shallots, cumin seeds till it get a nice brown color.
- Now grind them into paste.
- Take a wok and heat remaining oil in it.
- Saute cloves, cinnamon, and crushed cardamom in oil.
- When it releases a pleasant smell, add thinly sliced onion in it and saute till it gets brown color.
- Add ginger-garlic paste , slitted green-chilly and saute till its raw smell goes off.
- Now add chilly, coriander and turmeric powders and mix well.
- When oil seems clear through the sides, add chicken pieces and salt to it.
- Stir well and cook for 5 minutes.
- When masala coats to the chicken pieces and gives a pleasant smell,add 2 cups of water, tomato and potato pieces, curry leaves, stir well and cook by closed lid in low flame.
- When chicken and potato pieces cooked well, add the ground coconut paste, mix well and boil for 5 minutes in low flame and remove from fire.
