Majboos is a delicious rice recipe in which chicken/beef or mutton pieces are first cooked and then rice is cooked in same gravy. It brings rice a very special aroma and taste. It is simple and easy to prepare than biriyani but tastes great. Here i have simple recipe for Chicken Majboos in which chicken pieces are first cooked and then are taken out while adding rice. These pieces are then fried and are served with rice.We use whole spice here which provides a variant flavor.
INGREDIENTS FOR PREPARATION
- Chicken: 1/2 kg
- Basmati rice: 2 cup
- Onion: 1 large
- Tomato: 1 large
- Tomato puree: 1/2 cup
- Ginger : 1/2 inch(stripped)
- Garlic: 4-5 cloves(stripped)
- Green-chilly: 2 (slit into 2)
- Chilly powder: 1 tsp
- Turmeric powder: 1/2 tsp
- Coriander powder: 1/2 tsp
- Cloves: 2
- Cinnamon:1/2 inch
- Cardamom: 2
- Peppercorn: 6-8
- Bay leaf:1
- Chicken masala: 1/2 tsp
- Dry lemon: 1
- Ghee: 2 tbs
- Salt: to taste
- Coriander leaves: little
- Heat a pan and melt ghee in it.
- Saute cloves, cinnamon, cardamom,bayleaf and peppercorns in it.
- Next saute chopped onion.
- When it turns light brownish, add stripped ginger-garlic and slit green chilly, saute till its raw smell moves.
- Now add tomato pieces and cook till it mashes.
- Now add chilly powder, chicken masala powder , turmeric powder, dry lemon and salt to it
- Mix well and add chicken pieces and 3&3/4 cup of water to it, mix well and cook in low flame till chicken pieces cooks 3/4th with closed lid.
- Add chopped coriander leaves also.
- Now take out the chicken pieces and add soaked and drained rice to it,
- Mix well and cook in low flame with closed lid.
- Add salt if needed.
- By the time , fry the chicken pieces in oil. You can simply fry it as itself or marinate with little chilly powder and fry.
- When rice is about to get cooked, add the fried chicken pieces, mix well and turn off the flame.
- 'Open the lid only after 10-15 minutes.
