Onion rice is a delicious and healthy rice recipe which can be prepared easily. Here we uses both onions and shallots in little more quantity than in other rices to provide its flavor to rice, hence the name Onion Rice. Taste increases as we cook rice in coconut milk.
INGREDIENTS FOR PREPARATION
- Ghee Rice(kaima or jeerakashala): 250 g
- Onion: 100 g
- Shallots: 100 g
- Thick coconut milk: 1 cup
- Cinnamon stick: 2 inch
- Cloves: 4
- Cardamom: 3
- Ghee: 3 tbs
- Salt: to taste
- Cut the onions into little large slices and shallots into very thiny slices.
- Heat ghee in a pan and fry the onion pieces till it reaches golden brown color and remove from ghee.
- Then add cinnamon, cloves and cardamom to same ghee and saute little.
- Add shallots to it and cook till it softens.
- Now add 1 cup of water and allow it to boil.
- Meanwhile wash and drain rice.
- When water starts boiling, add rice , 1 cup coconut milk and salt to it and cook in low flame.
- When rice is about to done and water drains, add 3/4th of fried onions and mix well, cook for another 5 minutes in low flame..
- Turn off the flame.
