Tender coconut / elaneer pudding is lovely and are prepared in varieties. Here comes a easy recipe with a little variety in taste. Tender coconut is healthy and brings coolness to our stomach.
INGREDIENTS FOR PREPARATION- Tender coconut pulp: 2 cup
- Tender coconut water: 1 cup
- Milk: 500 ml
- Egg: 4
- Condensed milk: 1 tin
- China grass: 8 g / Gelatin: 3 tbs
- Sugar: if required
- Vanilla essence: 1/2 tsp
- Soak china grass or gelatin for 5-10 minutes and melt it.
- Separate egg yolk and white.
- Beat egg yolk using a spoon and mix it with milk, condensed milk and sugar.
- Cook in low flame by continuous stirring till it gets thickened and reach custard consistency.
- Add melted china grass and cook till it mixes well.
- Turn off the flame and allow it to cool a little.
- Beat egg white using a beater till it foams well.
- When the prepared mixture cools a little, add tender coconut water, pulp, essence and egg white .
- Mix well and pour into a pudding tray.
- When it sets half, Spread little tender coconut pulp over it and refrigerate again to set completely.
