Potatoes are rich in vitamins, iron, phosphorus,calcium and many more. They are helpful in lowering blood pressure also. Potatoes have many health benefits that you can understand by googling it. Here comes a recipe of baby potato masala , which is delicious and healthy too.
- Baby potato: 250 g
- Shallots: 4-5
- Mustard seeds: 1/2 tsp
- Cumin seeds: 1/2 tsp
- Asafoetida: a pinch
- Chilly powder: 1/4-1/2 tsp
- Turmeric powder: 1/4 tsp
- Coriander powder: 1/4 tsp
- Garam masala: 1/4 tsp
- Curry leaves: 2 strings
- Coriander leaves: little
- Salt: to taste
- Oil: 1 tbs
METHOD OF PREPARATION
- Cook the baby potatoes. you can either steam it or pressure cook it for 2 whistles.
- Allow it to cool a little and peel off the potatoes.
- Heat 1 tbs oil in a pan, crackle mustard seeds in it.
- Then splutter cumin seeds and curry leaves till they changes color a little.
- Now add chopped shallots and saute till they become translucent. No need of sauting more.
- Add a pinch of asafoetida and mix well.
- Then add peeled cooked baby potatoes and stir them well.
- Now add chilly powder,coriander powder, turmeric powder and garam masala and mix well to distribute everywhere.
- Add 1/4 cup of hot water and stir well.
- Add salt also.
- Cook till water dries off in low flame and add chopped coriander leaves.
- Stir well and turn off the flame.
