Kulfi is a popular frozen ice-cream dessert from Indian origin. Its main ingredient is milk sweetened with condensed milk and are converted into different flavors by adding fruit puree or essence. They can be made into different shapes based on moulds we are using. Mostly our children loves to eat kulfi. It is simple recipe with few ingredients but tastes well.
INGREDIENTS FOR PREPARATION
- Milk: 4 cups ( or use 2 cups of evaporated milk)
- Condensed milk: 1/4 tin( or use sugar instead)
- Cardamom powder: 1/4 tsp
- Strawberry puree: 3/4 cup( either use fresh fruit puree or readymade concentrated juice syrup)
- Thick cream:1 cup
- Cashews or almonds: 3-4 tbs coarsely crushed or finely chopped.
- Boil milk in a thick bottomed pan and reduce it to half the volume.
- Now add condensed milk and cardamom powder and stir till it combines well.
- Then add thick cream and stir till it melts and combines in milk mixture.
- Turn off the flame, add strawberry puree and finely chopped almond / cashew in it and stir well.
- Allow it to cool and pour into the kulfi mould and keep in freezer for 4-5 hours or till it sets.
