Vegetable Stew Recipe


Vegetable stew is a complete nutritious vegetarian gravy recipe rich in vegetables. Here is a recipe with mixed vegetables cooked in coconut milk. It is a simple, healthy and nutritious rich recipe, lets have a try on it.

INGREDIENTS FOR PREPARATION
  1. Green peas: 1/2 cup
  2. Carrot: 1
  3. Potato: 1
  4. Beans: 10
  5. Onion:1 / 5-6 shallots
  6. Tomato: 1
  7. Garlic paste: 1/2 tsp
  8. Green chilly:2
  9. Pepper powder: 1 tsp
  10. Turmeric powder: 1/4 tsp
  11. Fenugreek seed: 6-8
  12. Cinnamon stick: small piece
  13. Cardamom: 1
  14. Cloves: 1
  15. Thick coconut milk: 1 cup
  16. Thin coconut milk: 1-1&1/2 cup
  17. Corn Flour : 1/2 tsp
  18. Salt : to taste
  19. Oil: little
  20. Curry leaves: 1 string
METHOD OF PREPARATION
  • Soak green peas overnight or 5-8 hours.
  • Heat a cooker and add oil to it.
  • Splitter fenugreek seeds and and cinnamon, clove and cardamom to it.
  • Saute a while and add garlic paste then green chilly .
  • Add chopped shallots along with curry leaves  and saute for 2-3 minutes.
  • Then add chopped tomato, chopped vegetables and green peas to it and give a stir on it.
  • Then add pepper powder, turmeric powder and salt to it, stir well
  • add thin coconut milk, close the lid of cooker and cook for 3-4 whistles in low flame.
  • Turn off the flame and allow it to cool down.
  • Dissolve corn flour in thick coconut milk and are poured to the gravy, mix well and cook till it boils.
  • Turn off the flame and garnish with coriander leaves if needed.
Delicious Vegetable stew is ready. Serve hot with idli, palappam
