Sev puri is a delicious chat in the street of Mumbai now spreads allover India. Its a delicious combination of puris or papdis it mixed salad, sweet and spicy panis over it and are covered by sev.
INGREDIENTS FOR THE PREPARATION
- Onion:1
- Tomato: 1
- Boiled chickpeas: 3 tbs
- Potato: 1
- Green chilly: 1
- Chat masala: 1 tsp
- Salt: to taste
- Red chilly sauce: 1 tbs
- Coriander leaves: little
- Sev: 1 cup
For Sweet pani
- Tamarind: a large amla or lemon sized ball
- Jaggery: one inch piece
- Dates: 4-5
- Water: 1 cup
- Chilly powder:1/4 tsp
- Cumin(jeeragam)powder: 1/2 tsp
- Cardamom powder:1/2 tsp
- Salt: 1 tsp
- Semolina(rawa): 1/2 cup
- Wheat flour : 1/4 cup
- Maida(all purpose flour): 1/4 cup
- Salt : 3/4 tsp
- Oil:1 tsp
- Water :as required
For Pani
- Add tamarind, dates, jaggery, chilly powder, salt, cumin and cardamom powder, water in pan and boil .
- Boil it for 20-25 minutes with closed lid.
- Filter the mixture to get pani.

For Puri
- Add semolina, wheat flour, maida, oil and salt in a bowl and mix well.
- Mix it with water to get a smooth dough.
- Convert it into large 2-3 balls and roll it into thin sheets.
- Cut the sheets into small puris using a cookie cutter or lid of a bottle.
- For sev puri it can be used puffed puris as well as crispy papdis.
- For preparing papdis , Put holes on the cut puris with a fork to avoid puffing.
- Fry it in boiling oil .

For Filling
- Chop onion, tomato, greenchilly into small pieces.
- Cook potato and mash it well.
- Cook white chickpeas and are finely chopped after removing its skin.
- Place all these in a bowl and mix well.
- Add a little salt to it.
ARRANGEMENT OF SEV PURI
- Place 6-7 papdis or puri in a plate. If you are using puris, make a hole on top of it using a spoon.
- Place the filling mixture over it.
- Sprinkle little chat masala powder over it and add a little Red chilly sauce on top.
- Now pour the sweet pani over it.
- At last sprinkle the sev all over it and garnish with chopped coriander leaves.
- If you want add little sweet pani on top.
- If you wish you can prepare and add mint-coriander green chuttney above filling masala.
