Mango is a seasonal fruit lovable for everyone. We are also fond of cakes especially our little ones. Here comes a recipe for cake which are flavored with mango and are decorated with mango pieces.
INGREDIENTS FOR PREPARATION
- Egg: 3
- Sugar: 1 cup
- Mango essence: 1/2 tsp(optional)
- All purpose flour(maida): 1 cup
- Milk: 1 cup
- Oil: 1/2 cup
- Baking powder: 1/2 tsp
- Mango pulp: 1 cup
- Gelatin: 1 tbs
- Mango pieces: 1/2 cup
- Pour 3 eggs in a large bowl, and add 1 cup of sugar.
- Beat it using a beater till its foams well.
- Then add 1/2 cup of milk and oil to this and again beat for 5-10 minutes.
- Then add mango essence, mix well.
- Sieve baking powder and all purpose flour together 2-3 times to gets them mixed well.
- Add this to the beaten egg mix little by little by folding gently to avoid lump formation.
- Pour this on greased baking tray and microwave at 120 degree to 20-30 minutes.
- While baking , beat whipping cream powder with 1/2 cup of cold milk to get soft fluffy whipped cream.
- Puree mango to get pulp or buy ready made mango pulp.
- Melt 1 tbs of gelatin with little water and mix with mango pulp to get mango jelly
- Place the cake on a tray and cut into two halves.
- Spread mango jelly over each side and again paste it.
- Spread whipped cream throughout the cake .
- Garnish with prepared mango jelly and mango pieces according to your taste.
