Carrot is one of the vitamin rich vegetable . It is very good for eyes and have many other beneficial properties. Carrot halwa is a festive sweet especially during Diwali and Holi. Its a healthy sweet prepared with carrot and milk and doesn't contain any additives. Its preparation is simple and are healthy for kids also.
INGREDIENTS FOR PREPARATION- Carrot: 1 kg
- Sugar: 100 g
- Milk: 1 L
- Condensed milk: 25 g
- Cardamom: 10 g
- Cashew, raisins: 50 g
- Ghee: 100 ml
- Peel off the carrots and grate it.
- Roast cashew and raisins and keep aside.
- Cook the grated carrot in ghee for 10 minutes.
- Then add milk and condensed milk over it and mix well.
- Cook it by stirring in intervals till it thickens.
- Mix cardamom and sugar and cook by continuous stirring.
- Then add roasted cashews and raisins, mix well and turn off the flame.
- It should be thick but not too thick.
- Carrot halwa are consumed using spoon.
