Mangalorean Style Chicken Ghee Roast/ Dry Roast

Chicken Ghee Roast or dry roast is yummy Chicken roast recipe with the goodness of ghee flavor. It is spicy roast recipe that suits smoothly with rice, roti or any thing.


INGREDIENTS FOR PREPARATION
  1. Chicken: 1 kg
  2. Kashmiri chilly: 10
  3. Dry red chilly: 5
  4. Coriander seeds: 1 tbs
  5. Peppercorns: 1 tbs
  6. Fennel seeds: 1tsp
  7. Cumin seeds: 2 tsp
  8. Ginger: 2 inch
  9. Garlic: 5-6 cloves
  10. Lemon juice: 2 tbs
  11. Turmeric powder: 3/4 tsp
  12. Yogurt: 4 tbs
  13. Onion: 1
  14. Ghee: 2 tbs
  15. Salt: to taste
  16. Curry leaves: 2 strings
METHOD OF PREPARATION
  • Dry roast Kashmiri chilly, red chilly, coriander seeds, peppercorns, cumin and fennel seeds.
  • Allow it to cool and grind  to smooth paste along with ginger, garlic and lemon juice. Add a little water to ease grinding.
  • Marinate chicken pieces with the ground paste along with Turmeric powder, yogurt and salt. Keep in refrigerator for atleast 2 hours.
  • Heat a pan with ghee.
  • When it boils up , add chopped Onion and saute till it turns soft and translucent.
  • Now arrange the chicken pieces along with the marinade in the pan and roast it in medium low flame till it's done.
  • Now add on curry leaves , cook for another 2 minutes and turn off the flame.
Yummy and spicy Chicken Ghee Roast or Dry Roast in Mangalorean Style or flavor is ready. Serve hot with rice, roti or anything you loves.
