Carrot Pudding

Here comes a healthy, quick and yummy pudding with carrot. To enhance the taste and nutrients , here I garnished the top with caramelized beetroot. Try up this awesome recipe and enjoy eating.

INGREDIENTS FOR PREPARATION
  1. Milk: 500 ml
  2. Carrot: 1 grated
  3. Beetroot: 1/2 cup grated
  4. Condensed milk: 1/2 tin
  5. Sugar: 4 tbs 
  6. China grass: 8 g
METHOD OF PREPARATION
  • Caramelize grated carrot with 2 tbs sugar till carrot cooks well and soften.
  • Cut China grass into small pieces and add water to soak . Keep aside for 10 -15 minutes.
  • Boil china grass till it melts.
  • Boil milk with condensed  milk. Add more condensed milk or sugar if required.
  • Pour melted china grass and boil by stirring till it combines with milk.
  • Remove from flame and allow it to cool a little.
  • Now add caramelized carrot and  stir well.
  • Pour it to a pudding tray and allow it to cool.
  • Meanwhile caramelize beetroot with sugar. Grate beetroot thinly before caramelizing or crush it after that.
  • Garnish the top with caramelized beetroot and refrigerate to set and chill.
Yummy and healthy Carrot pudding is ready, serve chilled.
