Chicken Stew is an awesome gravy in which chicken and potatoes are cooked in coconut milk gravy. It is very delicious and healthy with appam, roti or rice. Give a try on this Kerala Version stew recipe.
INGREDIENTS FOR PREPARATION
- chicken: 1 kg
- Potato: 1or 2
- Onion: 2
- Tomato: 1/2 of 1
- Ginger- garlic paste: 1 tbs
- Green chilly: 6-7
- Cloves: 3-4
- Cinnamon: 1 inch
- Cardamom: 2
- Peppercorns: 10
- Garam masala powder: 1/2 tsp
- Turmeric powder: 1/4 tsp
- Pepper powder: 1/2-3/4 tsp
- Thick coconut milk: 3/4 cup
- Thin coconut milk: 1&1/2 cup
- Curry leaves: 2 strings
- Ghee: 2 tbs
- Oil: 1 tbs
- Salt: to taste
METHOD OF PREPARATION
- Heat oil and ghee in a thick bottomed pan and roast all whole spices in it till a nice Aroma arrives.
- Now saute ginger- garlic paste and curry leaves till it's Raw smell moves.
- Add chopped onion and green chillies and saute till onion turns soft.
- Next we have to add tomato pieces and cook till it mashes.
- Add chicken pieces along with turmeric powder and little salt and cook for 5-6 minutes in medium flame.
- Now add thin coconut milk and allow it to boil .
- Peel off and cut the potato into cubes and are added to above gravy.
- Add salt, garam masala powder too.
- Cook till chicken and potatoes get cooked. Also the gravy thickens a little.
- Now pour thick coconut milk along with pepper powder, stir well to combine and turn off the flame. No need of boiling again.
- Examine the taste and add salt or pepper powder if need more.
