Beetroot Kichadi

Here comes a delicious and healthy Beetroot Kichadi. It is easy and yummy with the flavour of coconut and thick curd. It goes smoothly with rice. Try this awesome and healthy vegetarian recipe.

INGREDIENTS FOR PREPARATION
  1. Beetroot: 1 large
  2. Grated coconut: 1 cup
  3. Thick curd: 1&1/2 cup( sourless)
  4. Green chilly: 4
  5. Garlic: 3 cloves
  6. Dry red chilly: 3
  7. Mustard seeds: 3/4 tsp
  8. Coconut oil: 1 tbs
  9. Curry leaves: 2 string
  10. Salt: to taste
METHOD OF PREPARATION
  • Peel off Beetroot and cut into 2-3 pieces.
  • Cook them with 2-3 cups of water.
  • Drain and grate it using a grater.
  • Grind grated coconut along with green chilly and garlic into paste.
  • Take a pan, add cooked grated Beetroot, coconut paste, curd and required salt. If you want, Cook for 3-4 minutes and remove from fire.
  • Heat another pan with coconut oil, crackle mustard seeds , then red chilly and curry leaves.
  • Pour it over the prepared Kichadi and serve.
Delicious Beetroot Kichadi is ready. Serve hot with rice or sadhya.
