Here comes a delicious and healthy Beetroot Kichadi. It is easy and yummy with the flavour of coconut and thick curd. It goes smoothly with rice. Try this awesome and healthy vegetarian recipe.
- Beetroot: 1 large
- Grated coconut: 1 cup
- Thick curd: 1&1/2 cup( sourless)
- Green chilly: 4
- Garlic: 3 cloves
- Dry red chilly: 3
- Mustard seeds: 3/4 tsp
- Coconut oil: 1 tbs
- Curry leaves: 2 string
- Salt: to taste
METHOD OF PREPARATION
- Peel off Beetroot and cut into 2-3 pieces.
- Cook them with 2-3 cups of water.
- Drain and grate it using a grater.
- Grind grated coconut along with green chilly and garlic into paste.
- Take a pan, add cooked grated Beetroot, coconut paste, curd and required salt. If you want, Cook for 3-4 minutes and remove from fire.
- Heat another pan with coconut oil, crackle mustard seeds , then red chilly and curry leaves.
- Pour it over the prepared Kichadi and serve.
Delicious Beetroot Kichadi is ready. Serve hot with rice or sadhya.
