Carrot Rice / Pulao

Carrot is a lovely and healthy vegetable with many nutritional benefits. Here comes a lovely rice or pulao recipe with it. It is simple and quick recipe which can be prepared easily. All will surely love and are healthy dish too. Especially our kids will love this, As they are lazy to eat vegetables alone, give a try on this healthy rice recipe.



INGREDIENTS FOR PREPARATION
  1. Basmathi rice: 1 & 1/2 cup
  2. Carrot: 1 large
  3. Mustard seeds: 1 tsp
  4. Cumin seeds: 1/4 tsp
  5. Uraddal seeds: 1/4 tsp
  6. Cloves: 2
  7. Cardamom: 2
  8. Cinnamon: 1 inch
  9.  Bay leaf: 1
  10. Star anise : 1
  11. Chilly powder: 3/4 tsp
  12. Turmeric powder: 1/2 tsp
  13. Garam masala powder: 1/2 tsp
  14. Salt:to taste
  15. Oil: 1 tbs
  16. Ghee: 1 tbs
METHOD OF PREPARATION

    • Wash and soak basmathi rice for 20-30 minutes. Drain its water.
    • Boil 2 & 3/4 cups of water along with required salt and 1 tbs ghee.
    • Add drained rice and cook till water drains and rice get cooked almost 85-90 %.
    • Keep it aside closed.
    • Heat a thick-bottomed pan, add oil in it.
    • When oil gets heated. sputter mustard seeds.
    • Sputter uraddal seeds and then cumin seeds.
    • Now saute all whole spices in it.
    • Next add the  spice powders along with salt and saute till a pleasant smell arrives.
    • Donot burn the powders.
    • Now add grated carrot in it and saute for 5-6 minutes.
    • Now add cooked rice and slowly fold it with cooked carrot mixture.
    • Cook for 3-4 minutes and turn off the flame.
    Delicious and healthy Carrot rice or pulao is ready.Serve hot.
