Now its summer and mango season to enjoy cold and lovely desserts with mango. Mango mousse is a delicious and awesome dessert with mangoes. Here comes a little twist in mousse which enlighten its taste. We are going to add crispy granola with it to have a crunchy effect. Granola is roasted oats with mixed dry fruits which can be prepared at home or buy ready-made. While preparing you can add any favorite dry fruit or a mixture of it of your choice. Here i used only cashew pieces. It is really wonderful , give a try upon it.
INGREDIENTS FOR PREPARATION- Mango : 2(medium)
- Gelatin: 10 g( or you can use china grass)
- Granola: 3/4-1 cup
- Whipping cream powder: 1 sachet
- Milk: 1/2 cup
- Sugar: 5-6 tbs( adjust with sweetness of mango)
- For preparing granola, roast 1 cup of oats in 1 tbs of butter with 2 tbs of brown or normal sugar and 2 tbs of honey till they turns its color and reduces by volume by stirring frequently.
- Mix it with any roasted dry-fruit of your choice and allow it to cool. By cooling , it will turns crispy. You can also do it by microwaving all ingredients at 375 degree F for 20-30 minutes with occasional stirring.
- Peel off the mango and puree it using a blender with required sugar in it.
- Soak gelatin or china grass in little water and melt it.
- Divide the mango puree into two equal parts and blend one half with melted gelatin to get combined.
- Pour it on a tray and allow it to set in refrigerator.
- Beat whipping cream powder with 1/2 cup cold milk till they become smooth and fluffy.
- Add reserved mango pulp and beat again to get combined.
- Refrigerate it for 2-3 hours to get chilled.
- Cut the prepared mango jelly into small cubes and fold half of it with mango cream mousse.
- Take pudding glasses, arrange a layer of crispy granola, followed by creamy mango mousse , top it with some mango jelly pieces and crispy granola.
