Pineapple is a lovely fruit which tastes more when well-ripened. Coconut milk provides a special taste and flavor to any dish. Here comes a delicious pine-apple coconut pudding recipe with pine-apple pulp and coconut milk which are solidified with gelatin. You can use china-grass instead of gelatin. It is simply delicious pudding recipe with few ingredients prepared within 15 -20 minutes.
INGREDIENTS FOR PREPARATION
- Well ripened pineapple(pulped): 2 cup
- Sugar: 1 cup
- Thick coconut milk: 1 cup
- Gelatin: 2 tbs
- Water: 1/4 cup
METHOD OF PREPARATION
- Remove the skin and thorn of a well ripened pineapple and cut into pieces.
- Now pulp it using a blender. No need of adding water.
- We require 2 cup of pineapple pulp.
- Boil pineapple pulp with sugar.
- When Sugar melts and combine with the pulp , turn off the flame and allow it to cool.
- Melt 2 tbs gelatin in 1/4 cup water by double boiling method.
- When pineapple mixture cools, mix thick coconut milk with it.
- If you see ,the mixture separate, it doesn't matter, it will be alright after adding gelatin and refrigerating.
- Now add melted gelatin to the above mixture and mix it thoroughly.
- Pour it to a pudding dish and refrigerate to set well.
- Garnish the top with your choice. I used desiccated coconut here as the pudding have coconut flavor too.
