Mango rice or Mavinakayi Anna is a delicious rice from Mangalore tradition. It is a lovely rice with a pleasant aroma and taste of mango. Now its going to start the mango season, try and enjoy this wonderful recipe. It is very simple, easy and tasty. You can also use white rice instead of basmati rice.
INGREDIENTS FOR PREPARATION
- Basmathi Rice: 2 cup
- Chopped Green Mango: 100 g
- Fenugreek: 1/2 tsp + a pinch
- Urud dal: 1 tsp
- Green chilly: 2
- Mustard: 1 tsp
- Dried red chilly: 2
- Curry leaves: 2 string
- Peanut: 20 g
- Oil: little
- Salt: to taste
- Wash and soak rice for 10-15 minutes.
- Cook the rice with 5 cups of water , salt and a tbs of ghee.
- When it cooked well without sticking, turn off the flame and drain the water.
- Cut or grate green mango and roast it in a pan. You can also dry them in sun heat.
- Roast 1/2 tsp fenugreek seed and powder them.
- Now heat little oil in a pan, sputter mustard, a pinch of fenugreek, uruddal, curry leaves, green chilly and red chilly one after the other.
- Add powdered fenugreek to it.
- Now add cooked rice and roasted mango and mix well with all other ingredients.
- Turn off the flame and garnish with roasted peanut.
