Dishes with eggs are easily prepared and lovely. There are large varieties of curry recipes with egg with many wonderful tastes . Here comes a lovely and simple egg curry recipe in coconut gravy. Grated coconut are ground to paste with few other ingredients and are used for preparation of gravy.
INGREDIENTS FOR PREPARATION- Egg: 4
- Onion: 1
- Green chilly: 1
- Grated coconut: 1 cup
- Chilly powder: 3 tsp
- Turmeric powder: 1/2 tsp
- Shallots: 5
- Chopped ginger: 1 tsp
- Tamarind: 1/4 tsp
- Curry leaves: 2 string
- Oil: 2 tbs
- Salt:to taste
- Grind grated coconut, chilly powder, turmeric powder, ginger, shallot and tamarind all together to paste with little water.
- Boil eggs, remove its shell and cut into two pieces.
- Heat oil in a sauce pan, saute chopped onion and slitted green chilly in it.
- When it turns to light brown color, pour the ground coconut paste and saute till the oil seems clear.
- Add 1 cup of water , mix well and allow it to boil.
- When the gravy starts boiling , add the egg pieces and salt and cook for 5-6 minutes in low flame.
- Add curry leaves.
- When oil comes clear turn off the flame.
