Egg-Coconut Gravy

Dishes with eggs are easily prepared and lovely. There are large varieties of curry recipes with egg with many wonderful tastes . Here comes a lovely and simple egg curry recipe in coconut gravy. Grated coconut are ground to paste with few other ingredients and are used for preparation of gravy.


Egg-Coconut Gravy
INGREDIENTS FOR PREPARATION

  1. Egg: 4
  2. Onion: 1
  3. Green chilly: 1
  4. Grated coconut: 1 cup
  5. Chilly powder: 3 tsp
  6. Turmeric powder: 1/2 tsp
  7. Shallots: 5
  8. Chopped ginger: 1 tsp
  9. Tamarind: 1/4 tsp
  10. Curry leaves: 2 string
  11. Oil: 2 tbs
  12. Salt:to taste
METHOD OF PREPARATION
  • Grind grated coconut, chilly powder, turmeric powder, ginger, shallot and tamarind all together to paste with little water.
  • Boil eggs, remove its shell and cut into two pieces.
  • Heat oil in a sauce pan, saute chopped onion and slitted green chilly in it.
  • When it turns to light brown color, pour the ground coconut paste and saute till the oil seems clear.
  • Add 1 cup of water , mix well and allow it to boil.
  • When the gravy  starts boiling , add the egg pieces and salt and cook for 5-6 minutes in low flame.
  • Add curry leaves.
  • When oil comes clear turn off  the flame.
Delicious Egg-coconut gravy is ready. Serve hot.
