Bonjan Salad

Bonjan salad is spicy and delicious salad prepared with egg plant. Bonjan or egg plant salad is a lovely salad from Afghanistan tradition. Eggplants are cut into pieces, are lightly fried and spiced with few ingredients. Eggplants are highly nutrient rich, a good source of phytonutrients       ,      vitamin B1 and K, potassium, copper, manganese,etc.  Thus including Bonjan salad in your weekly diet is really healthy.


INGREDIENTS FOR PREPARATION

  1. Egg plant: 3 medium
  2. Onion: 1 small
  3. Tomato: 1 small
  4. Tomato sauce: 1&1/2 cup                     
  5. Red chilly flakes: 1 tsp
  6. Pepper powder: 1/4 tsp
  7. Cinnamon powder: 2 tsp
  8. Kosher salt: 2 tsp
  9. Yogurt:1 cup(optional)
  10. Oil: 1/4 cup
  11. Salt: if needed.
METHOD OF PREPARATION

  • Cut the eggplants into 1-1.5 inch pieces and mix kosher salt with it and keep aside for 10-15 minutes.
  • Wash and drain the eggplant pieces. This treatment helps in removing its bitterness.
  • Heat oil in a pan and fry eggplant pieces for 3-4 minutes or they get light brown color.
  • Take another pan and add sliced onion, tomato, tomato sauce, red chilly flakes, pepper powder, cinnamon powder and little salt(if needed) and cook in low flame for 10 minutes.
  • Put egg plant pieces in a bowl and pour spiced tomato sauce over it.
  • Serve as itself or chilled.
Delicious and healthy Bonjan salad is ready,serve chilled with a cup of yogurt for better taste.
