Pina Colada Cake Pudding

Pina colada is a delicious combination of pine-apple in coconut milk. Here comes a lovely cake pudding recipe with pina colada flavor and are decorated with roasted coconut pieces and cooked pine-apple pieces. This pudding is prepared over a cake , hence the name cake pudding. It is easy and tasty.

Pina Colada Cake Pudding

INGREDIENTS FOR PREPARATION

  1. Vanilla cake: 1
  2. Condensed milk: 1/2 tin
  3. Pine-apple juice: 3/4 cup (either from canned pine-apple or cook pine-apple pieces with sugar and juice it)
  4. Thick coconut milk: 1/2 cup
  5. Whipped cream: 1 cup
  6. Sugar: 2 tbs
  7. Pine-apple: 4-5 slices
  8. Roasted coconut pieces: for garnishing
METHOD OF PREPARATION

  • Mix condensed milk, pine-apple juice and coconut milk together. Donot use juice from fresh pine-apple without cooking it, by the keeping time, it will brings a bitter taste sometimes.
  • Either use juice from canned pine-apple or first cook fresh with sugar and prepare juice.
  • Place the cake in a plate and pour the above mix all over it to get soften.
  • You can use any flavored cake, here i used vanilla cake.
  • Beat 1 cup whipped cream with 2 tbs sugar till it become fluffy and doubles. Keeping bowl in freezer before taking for beating ease the beating
  • Now cover the cake with beaten whipped cream.
  • Garnish the top and sides with roasted coconut pieces and cooked or canned pine-apple pieces.
  • Refrigerate for 2-3 hours.
Delicious soft Pinacolada Cake pudding is ready. Chill and serve sliced.
