Puddings are lovely desserts with varieties of tastes and flavor. Here comes a healthy pudding recipe with a combination of carrot, egg and milk. First we prepare ladus with cooked carrot and are placed in creamy egg milk custard. It is really yummy and are enriched with almond pieces. You can replace almond with pistachio or cashew.
- Milk: 2 cup
- Egg: 3
- Condensed milk: 1/2 tin
- Vanilla essence: 1/2 tsp
- Carrot:3
- Ghee: 2 tbs
- Sugar: 2-3 tbs
- Almond(peeled and chopped): 3/4 cup
METHOD OF PREPARATION
- Separate egg yolk and white. We need only egg yolk.
- Mix egg yolk with milk and condensed milk in a thick-bottomed saucepan
- Cook it in low flame by continuous stirring till it reaches custard consistency.
- Allow it to cool little and refrigerate to set.
- Meanwhile we can prepare carrot balls.
- Peeloff and grate the carrot.
- Heat ghee in a pan and cook grated carrot in it.
- Add sugar to it, mix well and cook.
- If needed add more sugar,
- Mix half of the chopped almond with it.
- When carrot gets cooked and reached a consistency that we can prepare balls with it, turn off the flame.
- Allow it to cool a little and prepare balls with it.
- Place these balls into the prepared custard in between and decorate the remaining gaps with reserved almonds.
- Again refrigerate for 5-6 hours.
