Noodles became an unavoidable food dish for this generation. Teenagers and kids mostly loves to have it always but its not considered too healthy. Here comes a healthy noodles recipe to replace the unhealthy one. In this recipe, we use rice noodles or rice vermicelli for the preparation. Rice noodles with a rich combination of vegetables converts it to delicious and healthy dish.

- Rice noodles / vermicelli: 200 g
- Prawns(cooked with salt and chopped): 1/2 cup
- Onion: 1(small)
- Carrot: 1
- Beans: 5
- Cabbage(chopped in 2 inch length): 1/2 cup
- Spring onion: 3
- Ginger grated: 1 tsp
- Garlic grated: 1 tsp
- Green chilly: 3
- Light soy sauce: 1 tsp
- Honey: 1&1/2 tsp
- Lime juice: 1&1/2 tbs
- Vegetable oil: 1&1/2 tbs
- Salt : to taste
- Coriander leaves: to garnish
- In a sauce pan boil water. Quantity of water is that it should cover rice noodles.
- When water starts boiling, add rice noodles to it. Keep it in water till it softens.
- When it softens, immediately drain off the water and Place it open in a tray or cloth.
- Now heat a non stick pan,Pour oil in it and boil.
- Now saute grated garlic and ginger and also chopped green chilly(chopped thinly in length) for 1 minute.
- Chop onion, spring onion, beans into 1 inch pieces and carrot and cabbage into 2 inch piece.
- Add chopped vegetables and salt to sauting pan, cook it in high flame for 4-5 minutes by continuous stirring.
- Now add chopped prawns to it and mix well. You can also use chopped chicken instead.
- Turn off the flame and keep the pan open.
- Now mix lime juice, honey and sauce together to prepare dressing for noodles.
- At the time of serving, mix noodles slowly with prepared prawn-vegetable mix . Also adjust the salt .
- Now pour the prepared dressing mix over it and fold slowly to get mixed well.
- Garnish it with coriander leaves and serve.
