Mango Roasted Masala Pickle

Pickles are lovely and mouth-watering. Most of us are fond of pickles and loves to eat alone or with any thing like rice, cucumber, mango, pineapple and so on. Here comes a very delicious recipe among pickles that is Mango Pickle in Roasted Masala. It is really delicious and mouth-watering.

Mango Roasted Masala Pickle

INGREDIENTS FOR PREPARATION
  1. Unripe Mango(medium): 2
  2. Red Chilly: 25
  3. Asafoetida: 1/4 tsp
  4. Fenu-greek seeds: 1 tsp
  5. Mustard Seeds: 1&1/2 tsp
  6. Cumin seeds: 1/2 tsp
  7. Turmeric Powder: 1/4 tsp
  8. Salt: 1/4 cup
  9. Coconut Oil: 4 tsp
METHOD OF PREPARATION
  • Wash and dry the mangoes and cut it into small cubes from a dry place.
  • Take care not to contact with water or any liquid.It will reduce its lifetime.
  • Now take a dry and clean jar, layer it with mango pieces then with salt. Repeat the steps for whole mango and salt taken.
  • Now close the jar tightly with its lid and keep aside for 2-3 days.
  • After three days, open the lid and transfer the mango pieces one by one using spoon or plucker to a dry and clean cotton cloth to remove the water from it. Let it rest there few minutes to remove all the watery content.
  • Now take the remaining salt water in the jar, pour it to a clean pan and add 1 cup more water to it
  • Boil it till it reduce to half in quantity.
  • Let us roast the masalas.
  • Take a dry thick-bottomed wok or vessel, roast mustard seeds and then cumin seeds till they splutter out and remove it from vessel.
  • Now roast fenugreek seeds till they change color slightly and produce pleasant aroma and take it out.
  • Now add 4 tsp of coconut oil and roast red chillies till they puff up. Take it out and roast asafoetida for a while and remove it out.
  • Allow it to cool completely.
  • When it cools down, grind the roasted masala and turmeric powder together into a fine paste with salt water we prepared above.
  • In a wide,dry and clean bowl, pour the prepared pickle masala paste,then mix mango pieces with it well.
Yummy mouthwatering Mango Roasted Masala Pickle is ready . Store it in dry, clean and air-tight container for longer period.
