Malabar Chicken Biriyani

Chicken biryani is a delicious recipe in any occassion. a recipe from malabari chicken is really yummy and mouth-watering. Here comes a simple malabari recipe which tastes yummy with easy steps and ingredients.


Malabar Chicken Biriyani Recipe
INGREDIENTS FOR PREPARATION
  1. Chicken: 1/2 kg
  2. Biriyani rice: 1/2 kg
  3. Onion: 4(thinly sliced)
  4. Ginger-garlic paste:1&1/2 tbs
  5. Green-chilly : 6
  6. Tomato: 2
  7. Garam masala powder: 1 tsp
  8. Lime: 1
  9. Cardamom: 2
  10. Cloves: 2
  11. Cinnamon: 1 piece
  12. Coriander leaves: 3/4 cup
  13. Mint leaves: 3/4 cup
  14. Biriyani color: little
  15. Ghee: 100 g
  16. Salt: to taste
METHOD OF PREPARATION

  • Heat a pan and melt ghee by reserving 3-4 tbs of ghee.
  • Saute 3 thinly sliced onions in ghee.
  • When it reaches brownish color, add ginger-garlic paste and green-chilly paste and saute well for 3-4 minutes.
  • Now add chopped tomatoes and saute till it mashes well..
  • Now add chicken pieces,3/4 tsp garam masala powder and salt and mix well. 
  • Cook in low flame with closed lid.
  • When chicken cooks half , add 1/2 cup of  coriander and mint leaves each and half lime's juice, mix well and cook again with closed lid till it cooks well.
  • Take another pan,add 2-3 tbs of ghee and saute reserved thinly chopped onion slices to golden brown color.
  • Take it out and add washed and drained rice to it and stir well.
  • Now add required water(for 2 cup rice, i added 3&3/4 cup hot water),cardamom, cloves, cinnamon, salt and little mint leaves.
  • Mix well and cook till water drains completely.
  • Now layer the prepared masala in a thick-bottomed pan, and layer prepared rice over it.
  • Mix biriyani color in remaining lime juice and spinkle it over the rice.
  • Now spread remaining ghee, garam masala, coriander and mint leaves over it.
  • Also spread little golden brown onion slices over it.
  • Cover it with a thick lid and cook for 5 minutes in low flame.
Delicious Malabar Chicken Biriyani is ready. Serve hot by garnishng with remaining onion. You can also use roasted cashews and raisins for garnishing.
