Kashi Halwa / Ash Guard Halwa

Kashi halwa is a delicious traditional sweet dessert of  Karnataka especially Udupi prepared with ash guard / white pumpkin. It is served in most of the occasions  there. It is  yummy, sweet and easy to prepare with few ingredients. Our kids too loves to eat it. It can be served alone or with a scoop of ice-cream. You can prepare in with yellow pumpkin also.

INGREDIENTS FOR PREPARATION

  1. Ash Guard( thinly grated ):2&1/2 cup
  2. Sugar: 1&1/2 cup
  3. Cardamom Powder: 1/2 tsp
  4. Roasted Cashew: 1/4 cup
  5. Ghee: 4 tsp
  6. Saffron: little.
METHOD OF PREPARATION

  • Wash and drain the grated ash guard.
  • Roast cashew pieces in little ghee.
  • Heat a cooker and add 3 tsp ghee to it.
  • When ghee melts, roast the grated ash guard for few minutes.
  • Now add water to it.Water should be in the half level of grated ash guard.
  • Close the lid of cooker and cook till 12 whistles comes out.
  • Now add sugar and saffron  and mix well. We atre adding saffron for getting the color.
  • Cook by stirring occasionally till it thickens and drains the water content completely.
  • Now add roasted cashews and cardamom powder to it and mix well.
  • Turn off the flame.
Delicious Kashi Halwa is ready. Serve hot or chilled with a scoop of ice-cream or alone.
