Biriyani is a delicious mixed rice dish prepared with a combination of rice, spices and meat or vegetables or seafood. Here come a recipe for chicken biriyani, Biriyani will be more delightful and tasty if you prepare it by taking time.
INGREDIENTS FOR PREPARATION
- Chicken(cut into big pieces): 1 kg
- Biriyani rice: 1 kg
- Onion(sliced in length): 1/2 kg
- Tomato: 100 g( cut into 4 pieces)
- Ghee / refined oil: 1/4 kg
- Green chilly: 100 g
- Ginger: 50 g
- Garlic: 50 g
- Kuskus: 1 tsp
- Curd: 1 cup
- Cashew: 20 g
- raisins: 20 g
- Coriander leaves: 1 cup
- Mint leaves: 1/2 cup
- Lemon: 1
- Rose water: 2 tbs
- Yellow food color or saffron: little
- Garam masala powder: 3 tsp
- Salt: to taste
- Separately prepare pastes of ginger, garlic and green chilly.
- Prepare a smooth paste of kuskus.
- Heat a thick bottomed pan and add half of ghee and saute half of the sliced onion.
- When the onion starts to change color, add green chilly paste, then ginger paste and last garlic paste sauting 1-2 minutes in between every addition.
- Saute it till its raw smell goes off.
- When a pleasant smell arrives, add the chicken pieces and stir well to get covered by the masala.
- Add curd, kuskus paste, tomato pieces,chopped coriander and mint leaves(reserve little for garnishing) salt and 1/2 cup of water to it and mix well.
- Close the lid and cook in low flame till the chicken pieces cooks well and dries off the water.
- Turn off the flame.
- Wash the rice and strain its water.
- In another pan, heat remaining ghee, add remaining onion slices and saute till it reaches golden brown color and take off from ghee.
- In the same ghee, roast cashew and raisins.
- To the same ghee, add rice and saute for sometime till the rice become little soft.
- Now add the required water to cook rice and salt to it, mix well and close the lid.(1 cup of rice requires 2 cups of water. while preparing biriyani , reduce 1/2 cup of water from the total required water)
- Now add lime juice( its addition prevents from sticking off rice).
- When the water dries up, turn off the flame.
In a thick bottomed pan, add half of the prepared masala,spread little garam masala over it. Add half of rice over it. Sprinkle rose water mixed with color or saffron over the rice. Spread little garam masala , roasted cashew and raisins, little coriander and mint leaves over the rice. Repeat the same steps for remaining masala and rice. Close with a thick lid and place cinder( theekkanal) over it and cook in low flame for 10 minutes. Or you can place it in preheated oven for sometime instead.
Delicious Chicken biriyani ready .Serve hot by garnishing with roasted cashews, raisins and fried onions.
