Squid Biriyani Recipe



Squids are one of the tastiest among seafood dish which are good source of manganese and iron and are also high in copper content. Here is a recipe of biriyani with squids which are delicious and simple recipe. Addition of squids brings a special flavor to the biriyani.
INGREDIENTS FOR PREPARATION
  1. Biriyani rice: 2 cup
  2. Squid: 500 g
  3. Onion: 3 (large) +1 for rice
  4. Tomato: 2 (large)
  5. Garlic: 1 bulb
  6. Ginger: 1 piece
  7. Green chilly: 5
  8.  Chilly powder: 2 tsp
  9. Turmeric powder: 1/4 tsp
  10. Garam masala powder: 1&1/2 tsp
  11. Thick coconut milk: 2 tbs
  12. Coriander leaves: 1/2 cup
  13. Mint leaves: 1/4 cup(optional)
  14. Cinnamon stick: 1 inch
  15. Cloves: 3
  16. Cardamom: 3
  17. Ghee: 2 tbs
  18. Butter: 1 tbs
  19. Oil: 2 tbs
  20. Salt: to taste
  21. Roasted cashews and raisins: to garnish
METHOD OF PREPARATION

  • Clean the squid and cut into rings.
  • Make paste of ginger, garlic, green chilly separately.
  • Marinate it with chilly powder, turmeric powder and salt and keep aside for 10-15 minutes.
  • Heat a pan, add oil and fry squid pieces till the water dries off and squids get fried lightly.
  • Take off the squids and add onion to the same pan. Add oil if needed.
  • Saute till it transparent and then saute green chill paste.
  • Next saute ginger paste and then garlic paste and saute till its raw smell goes off.
  • Now add the tomato pieces and saute till it mashes well.
  • Add coconut milk, 1 tsp garam masala, coriander leaves( keep little aside for garnishing) and little salt and mix well.
  • Then add the fried squid pieces , mix well and cook for 5-10 minutes in low flame with lid closed.
  • Biriyani masala is ready. Turn off the flame.
  • Lets prepare rice.
  • Wash rice and drain off.
  • Measure 3 & 1/2 cups of water and boil it.
  • In a pan, add ghee and saute cinnamon, cloves and cardamom.
  • Then add onion and saute.
  • Then add rice and saute for 2-3 minutes.
  • Now add boiled water and salt and cook till rice cooks well with lids closed and occasional stirring.
  • Turn off the flame.
Layering
  1. take a wide bottomed pan and add little ghee on it.
  2. Spread half of the cooked rice over it as first layer.
  3. Then spread prepared masala over it and cover with a third layer of remaining rice.
  4. Sprinkle 1 tsp of garam masala over it, place 1 tbs of butter pieces and spread coriander leaves.
  5. Close with a tight lid and cook in low flame for 15-20 minutes.
Delicious Squid biriyani is ready. Serve hot by garnishing with roasted onions, cashew, raisins and coriander leaves.
