Recipes with egg are simple and protein rich.Cashews are iron rich. Both tastes well. when both combine together, it gives a delicious recipe with high nutritional value. Here comes a recipe of egg curry combined with raw cashew kernels. IT is a simple recipe, requires only little time for cooking.
INGREDIENTS FOR PREPARATION
- Egg: 4
- Raw cashew kernels: 1 cup( instead you can use dry cashew soaked in warm water for 1 hour)
- Shallots: 1/2 cup
- Chilly powder: 3/4 tsp
- Coriander powder: 1 tsp
- Pepper powder: 1/2 tsp
- Garam masala powder: 1/2 tsp
- Turmeric powder: 1/4 tsp
- Kuskus: 1 tbs
- Tomato sauce: 3 tbs
- Oil: 3 tbs
- Water: 1&1/2 -2 cups
- Curry leaves: 1 string
- Mint leaves: to garnish
- Salt: to taste
METHOD OF PREPARATION
- Boil egg and cut into 4 pieces.
- Grind chilly powder, coriander powder, turmeric powder, pepper powder, garam masala powder, and kuskus to get a fine paste.
- In a thick-bottomed pan, heat oil and saute shallots with curry leaves.
- Then add masala paste and saute till its raw smell goes off.
- To this add salt, tomato sauce and water, mix well and allow it to boil.
- When it starts boiling, add egg pieces and cashews, mix well and cook in low flame with lid closed.
- When gravy becomes required thickness, add mint leaves add turn off the flame.
Delicious Egg cashew curry is ready. Serve hot with any dish.
