Banana rolls / Unnakkai Recipe



Banana rolls or unnakkai is a delicious traditional or festive snack of malabari kitchen . It is prepared with slightly ripened big yellow bananas. It is a sweet snack loved by everyone especially our kids.
INGREDIENTS FOR PREPARATION

  1. Big yellow banana: 2
  2. Egg: 2
  3. Grated coconut: 3 tbs
  4. Sugar: 3-4 tbs
  5. Cardamom: 2
  6. Ghee: 1-2 tbs
  7. Oil / ghee: for frying
METHOD OF PREPARATION

  • Cook the bananas with the help of a steamer. Banana should not be more ripened, slightly ripened bananas are used.
  • After cooking, mash it well using back of a laddle. If it is too hard add a tbs of powdered sugar and mix well.
  • Lets prepare the sweet masala for stuffing.
  • Heat a pan and add ghee.
  • When it melts add grated coconut and roast it.
  • When a pleasant smell of roasted coconut arrives add egg, sugar and cardamom.
  • Stir well and cook until it done well.
  • You can add more sugar if you want.
  • Convert the mashed banana into 10-12 balls.
  • Grease our hands with little oil or ghee and take a ball.
  • Flatten it using hand and place the prepared masala in middle and roll it into oval shape.
  • Grease oil or ghee over it to get a perfect shape.
  • Do the same with other balls.
  • Fry it in oil or little ghee.
Delicious, yummy banana rolls or unnakkai is ready, serve hot with a cup of tea or coffee.
