Pakkavada is a crispy traditional snack item of south India. It is prepared with dough prepared by besan and rice powder with a little chilly powder. It is available in markets. It can be prepared store for longer period in an air-tightened container and consume it for evening tea.
INGREDIENTS FOR PREPARATION
- Besan: 3 cups
- Rice powder: 1&1/2 cup
- Ghee: 1 tbs
- Chilly powder: 2 tsp
- Asafoetida: 1 tsp
- Baking soda:1/4 tsp(optional)
- Shallots: 15-20
- Garlic: 10
- Fennel seeds: 1/4 tsp
- Salt to taste
METHOD OF PREPARATION
- Grind chilly powder, asafoetida, shallots, garlic, salt and fennel seeds using a mixer jar to a fine paste.
- Take besan and rice powder together in a bowl, mix well.
- Mix ghee with this powder mixture.
- Add baking soda also.
- Then add the grounded paste to it and mix well.
- Add little water and make it a smooth dough.
- Replace the disc of idiyappam mould with thin ribbon slit disc .
- Fill the mould with the dough .
- Empty the mould into the boiling oil.
- Fry till it become brownish color and take out from the oil.
- When it cools, store in airtight container.
- It can be converted into any shape you like, but actual pakkavada shape ribbon.
