Kashmiri Pulao Recipe.


Kashmiri pulao is delicious and colorful dish rich in fruits , vegetables and dry fruits. It is not too spicy nor sweety, have a variant taste. It goes well with any spicy gravy or alone. It is nutritious rich and easy to prepare.

INGREDIENTS FOR PREPARATION
  1. Basmathi rice: 1 cup
  2. Milk: 1 cup
  3. Water: 1 cup
  4. Butter:1tbs
  5. Cinnanon: 1 inch piece
  6. Cloves:2
  7. Cardamom: 2
  8. Bayleaf: 1
  9. Sugar: 1tsp
  10. Salt: to taste
  11. Fennel powder: 1/2 tsp
  12. Carrot: 1/4 cup
  13. Beans: 1/4 cup
  14. Sweetcorn: 1/4 cup
  15. Green peas:1/4 cup
  16. Apple:1
  17. Pineapple: 1/2 cup
  18. Cashew: 1/4 cup
  19. Raisins: 1/4 cup
  20. Almond: 1/4 cup
For seasoning
  1. Butter:2 tsp
  2. Ginger: 1 inch
  3. Cardamom: 1
  4. Cloves:1
  5. Cinnamon: 1 inch
  6. Cumin seeds: 1/4 tsp
METHOD OF PREPARATION
  • Wash and soak basmathi rice for 15 minutes.
  • Heat butter in a pan, add cinnamon, cardamom, cloves and bay leaves.
  • Saute again for 2-3 minutes, add milk, water, sugar and salt to it.
  • Mix well and cook with lid closed  until the rice cooks .
  • Chop carrot and beans into 1/2 inch pieces.
  • Cook these vegetables with green peas and sweetcorn and keep aside.
  • Apple and pine apple are peeled off and chopped into small pieces.
  • Roast cashew,raisins and almond(soked and peeled off) and are cut into small pieces.
  • Heat a large pan, add butter and then cumin seeds, cinnamon, bay leaves,cloves, cardamom and other spices if any.
  • Saute it and add ginger pieces to it.
  • Saute it for 2 minutes, add cooked vegetables, fennel powder, and roasted dry fruits to it and mix well.
  • Then add cooked rice, mix well and cook for 4-5 minutes in low flame.
  • Turn off the flame and add chopped fruits to it, mix well.
  • Donot cook after adding fruits.
Delicious, healthy and colorful Kashmiri Pulao is ready. Lets have a try on it and serve hot.
