Kashmiri pulao is delicious and colorful dish rich in fruits , vegetables and dry fruits. It is not too spicy nor sweety, have a variant taste. It goes well with any spicy gravy or alone. It is nutritious rich and easy to prepare.
INGREDIENTS FOR PREPARATION
- Basmathi rice: 1 cup
- Milk: 1 cup
- Water: 1 cup
- Butter:1tbs
- Cinnanon: 1 inch piece
- Cloves:2
- Cardamom: 2
- Bayleaf: 1
- Sugar: 1tsp
- Salt: to taste
- Fennel powder: 1/2 tsp
- Carrot: 1/4 cup
- Beans: 1/4 cup
- Sweetcorn: 1/4 cup
- Green peas:1/4 cup
- Apple:1
- Pineapple: 1/2 cup
- Cashew: 1/4 cup
- Raisins: 1/4 cup
- Almond: 1/4 cup
- Butter:2 tsp
- Ginger: 1 inch
- Cardamom: 1
- Cloves:1
- Cinnamon: 1 inch
- Cumin seeds: 1/4 tsp
- Wash and soak basmathi rice for 15 minutes.
- Heat butter in a pan, add cinnamon, cardamom, cloves and bay leaves.
- Saute again for 2-3 minutes, add milk, water, sugar and salt to it.
- Mix well and cook with lid closed until the rice cooks .
- Chop carrot and beans into 1/2 inch pieces.
- Cook these vegetables with green peas and sweetcorn and keep aside.
- Apple and pine apple are peeled off and chopped into small pieces.
- Roast cashew,raisins and almond(soked and peeled off) and are cut into small pieces.
- Heat a large pan, add butter and then cumin seeds, cinnamon, bay leaves,cloves, cardamom and other spices if any.
- Saute it and add ginger pieces to it.
- Saute it for 2 minutes, add cooked vegetables, fennel powder, and roasted dry fruits to it and mix well.
- Then add cooked rice, mix well and cook for 4-5 minutes in low flame.
- Turn off the flame and add chopped fruits to it, mix well.
- Donot cook after adding fruits.
