Mussel Rolls

Mussel rolls are rolls prepared with flavoured rice dough with yummy mussel filling. Now it's Mussel season try this yummy, spicy teatime snack ,which brings out mouth licking bites.
INGREDIENTS FOR PREPARATION
For dough
  1. Par boiled rice: 2 cups
  2. Coconut grated: 1/2 of 1
  3. Shallots: 3-4
  4. Cumin seeds: 1 tsp
  5. Green chilly: 2-3
  6. Salt: to taste
For filling
  1. Mussels: 50
  2. Onion: 2
  3. Green chilly: 2
  4. Ginger-garlic paste: 2 tsp
  5. Turmeric powder: 1/2 tsp
  6. Chilly powder: 1 tsp+ 1 tbs
  7. Salt: to taste
  8. Garam masala: a pinch
  9. Curry leaves: 2 string
  10. Coriander leaves: 1 tbs
  11. Oil for frying
METHOD OF PREPARATION
  • Soak parboiled rice in water overnight or for 4-5 hours atleast.
  • If you have the mussels with shell, then clean the mussels and cook it to open the shell, the water will ooze out from the shells while cooking, use that water while grinding rice which give a nice flavour.
  • Grind it along with grated coconut, cumin seeds, shallot, water we reserved while cooking mussels and salt as we do for pathiri. Or you can use rice flour also, grind coconut, cumin and shallots with little water and prepare dough with rice flour and this mixture.
  • You can also use white rice instead of parboiled rice but parboiled rice tastes more.
  • Note: If the dough is watery, heat it in a pan to turn it smooth unsticky dough like that we prepare for pathiri which helps us to roll the balls with our hands.
For filling
  • Marinate mussels with 1 tsp chilly powder, 1/4 tsp turmeric powder and salt.
  • Heat 1 tbs oil in a pan and fry the marinated mussels 
  • Take-out the fried mussels and add chopped onion in same oil. Add more oil if required.
  • When the onion turns soft and translucent, add ginger -garlic -greenchilly paste , curry leaves and saute till it's raw smell escapes.
  • Now add a pinch of garam masala , salt and fried mussels and cook for 2-3 minutes.
  • Add in chopped coriander leaves and remove from flame.
  • Now take a medium dough balls and flatten it with your palms.
  • Place some prepared filling in centre and make it into rolls.
  • Repeat the steps for all dough and fillings.
  • Place all the rolls in a steamer and steam it for 20-25 minutes or til it's done.
  • In a bowl, prepare a batter with 1 tbs chilly powder, turmeric powder and salt by adding little water.
  • Heat oil in a pan , dip each steamed roll in prepared​ chilly batter and place in hot oil.
  • Fry them till all sides turn light golden. Donot fry more.
  • Place in kitchen tissues to remove excess oil.
Delicious and spicy Mussel rolls are ready, serve hot with a cup of tea or coffee.
