Kerala Mixture

As we Keralians are spice lovers, here comes a spicy mixture recipe that we can prepare easily and healthy at home with only a feww ingredients. It is really yummy and are of great flavor of curry leaves and garlic. Give a try upon it.

INGREDIENTS FOR PREPARATION
  1. Gram flour or besan: 3 cup
  2. Chilly powder: 1&1/2tsp
  3. Turmeric powder: 1/2 tsp
  4. Asafoetida: 1/2 tsp
  5. Peanut: 1/2 cup
  6. Garlic: 5-6 cloves
  7. Curry leaves: 2-3 strings
  8. Salt: to taste
  9. Oil: for frying
METHOD OF PREPARATION
  • First we can prepare thick and thin sev.
  • For that mix in 2 cups of besan, 1/2 tsp chilly powder, 1/4 tsp turmeric powder,1/4 tsp asafoetida, and salt.
  • Knead it well to a smooth dough by adding water.
  • Place the disc with small holes in sevnari or idiyappam maker and fill half of the dough in it.
  • Heat oil in a deep pan and press the sev nari directly to oil.
  • Cook till both sides became crispy and golden.
  • Now replace the disc with a disc having little larger holes, fill it with remaining dough and repeat the steps as we done earlier.
  • Now prepare a thick pouring batter with remaining besan, 1/4 tsp chilly powder, turmeric powder, a pinch of asafoetida,salt by adding enough water without any lump.
  • Place a laddle with holes above the oil pan and pour the batter little by little over the laddle, which brings out boondhis.
  • Cook till they are cooked and turns crispy.
  • Donot over load the oil with boondhis which won' t give perfect boondhis. Do little by little.
  • Now fry the peanuts in same oil.
  • Also fry the curry leaves and crushed garlic in same oil for seasoning.
  • Now mix everything we prepared.
  • Season it with 1/2-3/4 tsp chilly powder, little asafoetida. Also you can add little salt if required.
Delicious spicy and crispy Kerala Mixture is ready. Cool and store in airtight container for future use.
