Squid Ada / Koonthal appam

Squid comes under lovely seafood dish. Here comes a lovely breakfast or teatime snack from Malabar cuisine, A lovely squid filling is prepared and are then filled in rice patties, are steam cooked and then fried in oil. You can sip frying process as steam cooked one also tastes great. Give a try on this awesome recipe and enjoy




INGREDIENTS FOR PREPARATION

  1. Squid: 1/2 kg
  2. Shallots: 10-12
  3. Ginger: smallpiece
  4. Garlic: 3-4
  5. Tamarind: small piece
  6. Chilly powder: 1 tbs + 1 tsp
  7. Turmeric: 1/2 tsp
  8. Rice powder: 1 cup
  9. Cumin: 1/2 tsp
  10. Salt: to taste.
  11. Oil:as required
METHOD OF PREPARATION
  • Clean squid and cut into small pieces.
  • Grind 6-8 shallots, ginger, garlic, tamarind, 1 tbs chilly powder,turmeric powder and salt to a fine paste and marinate squid with it. Keep it aside for 10-15 minutes.
  • Add little oil in a pan and add marinated squid in it.
  • Cook till all water dries and gravy thickens. You can either use squid coated with thick gravy as filling or fry them to use.
  • Grind remaining shallot with cumin seeds and add to rice powder kept in a bowl.
  • Add salt also and mix them well.
  • Convert them into smooth dough by adding water.
  • Take a ball from it and roll it into circle.
  • Place squid filling in centre and cover from all sides. You can make any shape of your choice.
  • Do it with all dough and filling prepared and keep them in steamer for 15-20 minutes or till they get cooked.
  • Consume as it self or prepare a batter with chilly powder, turmeric powder, salt by adding little water, roll steam cooked ada in it and fry them in oil.
Delicious Squid ada or Koonthal appam is ready. Serve hot.
