Schezwan Sauce

Schezwan sauce is a spicy sauce from Indo-Chinese cuisine that are used in preparation of Schezwan fried rice, noodles, soup and all. It is a best choice of sauce for spice lovers. Also you can adjust spiciness by the addition of different dried red chillies , and also by increasing amount of brown sugar. It is really fantastic, easy and lovely recipe, give a try on it.



INGREDIENTS FOR PREPARATION

  1. Dry red chilly: 20
  2. Shallots: 5
  3. Garlic: 15 cloves
  4. Ginger: 1 inch
  5. Vinegar: 1 tbs
  6. Brown sugar: 1 tbs(or use normal sugar if not available)
  7. Soy sauce: 1/2 tsp
  8. Pepper powder: 1/2 tsp
  9. Celery(finely chopped):1/2 tsp(optional)
  10. Vegetable oil: 4 tbs
  11. Salt: to taste.
METHOD OF PREPARATION

  • Remove seeds of chillies and soak in hot water for 30 minutes.
  • Drain the water and grind it to paste with 1-2 tbs of water.
  • Finely chop or paste ginger and garlic.Also chop shallots into fine pieces.
  • Heat oil in a pan and saute finely chopped ginger and garlic.
  • When its raw smell moves , add chopped shallots and saute till they turns translucent.
  • Now add ground chilly paste , stir well and saute for 1-2 minutes.
  • Now mix 1/2 cup of hot water to it and cook for another 2 minutes.
  • After that add soy sauce, vinegar,  pepper powder,salt , brown sugar and finely chopped vinegar to it, stir well to combine and cook for 5-6 minutes by stirring.
  • If you want, you can add more sugar.
Delicious spicy Schezwan sauce is ready. Use or store in air-tight container in refrigerator.
