Schezwan sauce is a spicy sauce from Indo-Chinese cuisine that are used in preparation of Schezwan fried rice, noodles, soup and all. It is a best choice of sauce for spice lovers. Also you can adjust spiciness by the addition of different dried red chillies , and also by increasing amount of brown sugar. It is really fantastic, easy and lovely recipe, give a try on it.
INGREDIENTS FOR PREPARATION
- Dry red chilly: 20
- Shallots: 5
- Garlic: 15 cloves
- Ginger: 1 inch
- Vinegar: 1 tbs
- Brown sugar: 1 tbs(or use normal sugar if not available)
- Soy sauce: 1/2 tsp
- Pepper powder: 1/2 tsp
- Celery(finely chopped):1/2 tsp(optional)
- Vegetable oil: 4 tbs
- Salt: to taste.
- Remove seeds of chillies and soak in hot water for 30 minutes.
- Drain the water and grind it to paste with 1-2 tbs of water.
- Finely chop or paste ginger and garlic.Also chop shallots into fine pieces.
- Heat oil in a pan and saute finely chopped ginger and garlic.
- When its raw smell moves , add chopped shallots and saute till they turns translucent.
- Now add ground chilly paste , stir well and saute for 1-2 minutes.
- Now mix 1/2 cup of hot water to it and cook for another 2 minutes.
- After that add soy sauce, vinegar, pepper powder,salt , brown sugar and finely chopped vinegar to it, stir well to combine and cook for 5-6 minutes by stirring.
- If you want, you can add more sugar.
