Cucumber rice cake is a lovely breakfast or dinner recipe goes well with any gravy. Cucumber have a high content of minerals like magnesium, potassium, silicon etc that are healthy for our skin. They fight against cancer and are helpful in weight loss. Cucumber also helps to coolen our body and flushes out toxins. Thus cucumber intake have many health benefits.
INGREDIENTS FOR PREPARATION
- White rice: 1 cup
- Cucumber(small): 2
- Grated coconut: 2 tbs
- Shallots: 3-4
- Ghee: 2 tsp
- Salt: to taste
- Peel off cucumber and cut into small pieces.
- Wash and soak rice for 5-6 overs or overnight.
- Drain rice and put into mixer grinder.
- Grind it along with cucumber pieces, grated coconut and required water.
- Add salt to taste.
- Heat a thick-bottomed non-stick pan, melt ghee and roast sliced shallots till golden color.
- Now pour the ground batter and cook in low flame with lids closed for 10-15 minutes.Or until the lower part cooked well and upper part drains.
- Turn to another side and again cook for 6-8 minutes.
- Turn off the flame.
