Balochi kheer is a traditional dessert from Baluchistan prepared by layering rice kheer with different jelly crystals and fruits and dry fruits. It is a rich and lovely dessert perfect for any occasion. They are healthy and nutrient rich with the ingredients we used for preparation.
INGREDIENTS FOR PREPARATION
- Milk: 1 &1/2 L
- Ghee rice: 4 tbs
- Sugar: 1 cup
- Khoya: 250 g
- Cornflour: 4 tbs
- Cardamom powder: a pinch
- Mixed fruits: 1/2 cup
- Mixed jelly crystal(any three flavors of your choice): 1 cup
- Cream: 1/2 cup
- Almond: 20 g
- Pistachio: 20 g
- Cashew: 20 g
- Cherry: 1/2 cup
- Boil milk.
- When it starts boiling , reserve 1/4 cup aside and add rice and cardamom powder to milk and cook for 15-20 minutes on low flame by stirring occasionally.
- Now add sugar and 3/4 part of khoya and mix well.
- Cook it for 5-6 minutes.
- Mix cornflour with reserved 1/4 cup milk and pour to above mixture by stirring.
- Cook till it thickens by continuous stirring and turn off the flame.
- Allow it to cool.
- Prepare jelly of three different flavors . Skip the directions in packet and use only half of water indicated in packet to get thick jelly pieces.
- Cut the fruits of your choice into small pieces.
- Soak and peel off the almonds.
- Chop almonds,cashew and pistachio into small pieces.
- You can use small ramkins or bowls or large pudding tray for layering kheer.
- If using small bowls, first layer it with some jelly pieces, then with fresh fruit pieces.
- Pour little cream and khoya over it.
- Sprinkle some chopped dry fruits above it.
- Top it with rice kheer.
- It you are using large pudding bowl, First pour half of jelly mix, then half of fresh fruits, then cream and khoya, next dry fruits and layer with half of rice kheer.
- Repeat the steps for remaining ingredients.
- Garnish it with dry fruits and jeera chocolate.
