Gajar Ka Halwa / Carrot Dessert

Carrot is one of the most lovely vegetable with many nutrients. Any dessert with it is really delicious and healthy. Here comes a lovely recipe for Carrot dessert or Gajar ka Halwa. It is prepared easily with mostly available ingredients but tastes great. You can consume it hot or chilled or with a scoop of ice-cream.

Gajar Ka Halwa / Carrot Dessert

INGREDIENTS FOR PREPARATION

  1. Carrot: 2 &1/2 kg
  2. Milk: 1 L
  3. Khoya: 200 g
  4. Sugar: 3 & 1/2 cup
  5. Ghee/ oil: 1/4 cup
  6. Cardamom: 6-8
  7. Coconut grated: 1 cup + 1 cup for garnishing
  8. Green food color: 1 drop
METHOD OF PREPARATION

  • Cook grated carrot and sugar, till it dries up  whole water from carrot itself and from sugar too.
  • Now add cardamom and mix well.
  • Add ghee / oil to the carrot mixture, mix and cook well for 5 minutes. Addition of ghee brings more taste than oil.
  • Now add milk to it, stir well and cook till whole milk dries up.
  • Stir frequently otherwise have a chance to burn at the bottom.
  • Now add  1 cup grated coconut, mix well and cook for 1-2 minutes.
  • Next add khoya to this and mix well.
  • Turn off the flame. 
  • Add it into a dessert bowl.
  • Now mix 1 cup of grated coconut with a drop of green food color to get a attractive color contrast. Garnish the top with it.
Delicious Gajar ka Halwa or Carrot dessert is ready to serve. You can either serveas itself or by chilling it.
