Chicken macaroni Cake is a delicious spicy snack recipe prepared with cooked macaroni and chicken masala. Lovely combination of macaroni and chicken masala are combined with beaten egg and are cooked in a pan with little ghee or oil to get this delicious spicy cake. It is mainly found in malabar cuisine especially during ifthar and special occasions.
- Macaroni: 1/2 cup
- Chicken: 1/2-3/4 cup(cooked with salt and pepper and are minsed)
- Egg: 3
- Onion: 2(medium)
- Ginger-garlic-greenchilly paste: 1&1/2 tsp
- Pepper powder: 1/2-1 tsp( based on your spiciness)
- Chicken masala: 1/2 tsp
- Garam masala: 1/4 tsp
- Turmeric powder: 1/4 tsp
- Curry leaves: 3-4 leaves
- Coriander leaves: 1 tbs
- Salt: to taste
- Butter / oil: 2-3 tbs
- Cook macaroni in water with little salt and oil.
- Immediately it cooks, drain the water and wash under running water to avoid sticking.
- Heat a pan and pour little ghee or oil.
- Saute chopped onion and chopped curry leaves in it.
- When it gets a light golden brown color, add ginger-garlic-green-chilly paste and saute till its raw smell moves.
- Now add chicken masala, garam masala, turmeric and pepper powder to it and saute for 1-2 minutes
- Now add cooked and minsed chicken, mix well and cook for another 2-3 minutes.
- Add salt if required.
- Add chopped coriander leaves, mix well and turn off the flame.
- Beat eggs in a bowl, add little salt and pepper powder and mix well.
- Take a large bowl, mix cooked macaroni, chicken masala and egg all together.
- Add salt or pepper powder if required by checking.
- Now heat a thick-bottomed non-stick pan with lid and pour 1 tbs oil or butter into it.
- Pour the prepared mix to the pan and cook in low flame with closed lid for 15-20 minutes.
- When one side is cooked, turn to other side.
- Add little more ghee through the sides.
- Cook for another 5-10 minutes and turn off the flame.
